No. Watermarking "is the process of .. embedding information into a digital signal" (Wikipedia). What we do is to take information about a file and place it somewhere neutral, whereas watermarking involves changing the file itself.
Yes. If you bank online, you already trust this family of technology. Much the same way public-key cryptography (which puts the S in HTTPS) uses a well known one-way function to encode secrets using a public key to encode messages that only the private key can decode, one-way hashes encode data in an unpredictable way so that every file creates it's own unique print.
